10-Grain Pumpkin Pancakes with Sweetened Cranberries

  • 2 cups Thrive Life 10-Grain Pancake Mix
  • 1-2 tsp Cinnamon
  • 1 tbsp Brown Sugar
  • 1/2 cup Pumpkin Puree
  • 1 1/4 cups Water
  • 1/2 cup Thrive Life Sweetened Cranberries
  • a splash milk (optional)
  1. Visit kmeyers.thrivelife.com to get the 10-Grain Pancake Mix and the sweetened cranberries. 

  2. Stir your pancake mix, cinnamon and brown sugar together in a large baking bowl. Make a well in preparation for the wet ingredients.

  3. Stir the water and pumpkin puree together. Pour it into the well.

  4. Stir until just mixed. Lightly stir in cranberries.

  5. Let the batter sit for 5 minutes. Check the consistency. If the batter is not flowing easily, add some more water or milk, in small amounts at a time until it is a good pancake batter consistency. (It should flow off a spoon, but still be reasonably thick). 

  6. Spoon your pancakes onto a hot griddle that has some melted butter in the pan. Flip when golden brown. 

  7. Enjoy with toppings of your choice, such as Grade 3 Dark Maple Syrup, whip cream or berries.
